About Nicole:

I grew up in Saratoga Springs, NY, but now I live in a small lakeside town in the Adirondacks. I have a Bachelor’s in Exercise Science and Health Education from Castleton University, and I’m currently pursuing my Masters in Nutrition and Dietetics at The Sage Colleges. I love to do anything outdoors; hike, kayak, you name it! When I’m not outside, I love teaching group fitness classes, and I love to bake and read. I’m also extremely passionate about growing my own food and sustainable food systems.

  1. How did you become interested in the field of dietetics? Why do you want to be a dietician?I’ve always struggled with my weight. In high school, I made the decision to start exercising and eating healthy, and as a result, I lost 30lbs. During my weight loss journey, I fell in love with all things health and wellness, and making those lifestyle changes changed the course of my life. I went from wanting to go to school to be a veterinarian, to wanting to become a dietitian, so I could help guide people in making the same changes that I did and teach them about the power that nutrition has on the body.
  2. What do you want to learn at The Sylvia Center?I am so passionate about education, and I’ve seen firsthand that knowledge has the ability to inspire and change the world. I have experience teaching health in a K-12 setting, but I wanted to join the Sylvia Center team to see how they integrate my 2 passions; healthy eating and cooking, in a community setting for families and youth.
  3. What does being healthy mean to you?

Being healthy does not just mean taking care of our physical body, but it also means we take care of our mental and emotional health too. It’s important that we are fueling our bodies and taking care of ourselves, but that we also dedicate time in our busy lives to do the things that inspire us and make us learn and grow, so we can truly be fulfilled and happy.
  4. What message do you want to tell young people about healthy eating?
Healthy eating is all about what we do the majority of the time! Always remember that balance and moderation is key!
  5. What is your favorite recipe to make?
    Muffins or bread!
