Classic Pesto Recipe

Pesto is an incredibly versatile sauce that originated in Genoa, Italy. It is made of basil, extra virgin olive oil, pine nuts, garlic, parmesan cheese, and salt. To make, blend all ingredients in a blender until you reach a smooth and thick consistency. Pesto can be sauce for pastas, sandwiches, roasted vegetables, or whatever you would like!

Classic Pesto
Serves 1 cup

 

Ingredients

4 cups fresh basil leave (from about 3 large bunches)

½ cup olive oil 

⅓ cup pine nuts

2 garlic cloves 

½ cup grated Parmesan cheese (pecorino will be better if you have)

1 teaspoon coarse Kosher salt

Preparation

Combine first 4 ingredients in blender. Blend until paste forms, stopping often to push down basil (add water if it is too thick.) Add cheese and salt, blend until smooth. Transfer to a small bowl. (Can be made 1 day ahead. Top with ½ inch olive oil and chill.)
