Oat Bars

Yields about two dozen bars

Ingredients:

6 tablespoons vegetable oil
2 cups oats
½ cup honey
⅓ cup maple syrup
⅓ cup brown sugar
½ teaspoon salt
¾ cups dried apricots, cut into small pieces
¾ cup dried cranberries
1 teaspoon cinnamon

Preparation:

  1. Preheat oven 350F.
  2. Line baking sheet with parchment paper. Brush parchment with oil.
  3. Spread oats evenly over another baking sheet. Bake for 5-6 minutes. Transfer to mixing bowl.
  4. Combine honey, maple syrup, brown sugar and salt in saucepan. Stir mixture over medium heat until sugar dissolves.
  5. Pour mixture over oats, fruit and cinnamon. Toss to coat. Spread mixture evenly on parchment lined baking sheet. Press mixture into pan with spatula.
  6. Bake for 25 minutes. Remove from pan and cut into 2 inch x 3 inch bars.
