Pizza with Homemade Sauce

 

For the Pizza Dough:

¾ cup of whole-wheat flour (can use all-purpose)

¾ cup of all-purpose flour

1 package of quick rising yeast

¾ teaspoon of salt

¼ teaspoon of sugar

½ cup of warm water

2 tablespoons of olive oil

 

Preparation:

  1. Combine the flour, yeast, salt, and sugar in a food processor; pulse to mix. Combine water and two tablespoons of oil in a measuring cup. With the motor running, gradually pour in enough of the hot liquid until the mixture forms a sticky ball. The dough should be quite soft. If it seems dry, add 1- 2 tablespoons of warm water; if too sticky, add 1 -2 tablespoons of flour. Process until the dough forms a ball, then process for 1 minute to knead.
  2. Remove it from the food processor, rub lightly with olive oil, and cover with plastic wrap. Let the dough rest for 20 minutes. 
  3. Divide the dough into two balls, and roll out dough into 13-inch circle on a lightly floured surface.  Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well-oiled pizza pan.
  4. Spread tomato sauce or pesto on the dough. Top with cheese and vegetables. Bake until cheese is golden, about 10-15 minutes.

 

Tomato Marinara Sauce

Makes 4 cups

 

Ingredients:

2 tablespoons of olive oil

1 onion, minced, any variety

4 cloves of garlic, minced

Pinch of red chili flakes

2 tsp salt

1-28 ounce can of crushed tomatoes

 

Preparation:

  1. Heat a medium saucepan over medium high heat, add olive oil and onion. Saute 3-4 minutes, until onion is softened. Add garlic, salt and chile flakes, saute another 2 minutes until garlic is fragrant but not browned. 
  2. Carefully add the crushed tomatoes, and bring to a simmer. Cover and simmer 10-15 minutes, stirring occasionally.  Taste for seasoning and add salt and pepper if necessary.
