Waste-Free Broccoli Scallion Salad 

Ingredients: 
2 heads broccoli, cut into florets, stalks peeled and thinly sliced
1 bunch scallions, white part only, thinly slices; reserve greens for dressing

For Dressing: 
1 cup scallion greens (one bunch)
2 teaspoons fresh ginger
3 tablespoons rice vinegar
2 tablespoons soy sauve
2 teaspoons sesame oil
1 teaspoon hone
3 tablespoons olive oil

Directions:

  1. Combine broccoli, broccoli stems, and sliced scallions in a salad bowl.
  2. Combine scallion greens, ginger, rice vinegar, soy sauce, sesame oil, and honey in a blender. Slowly add olive oil.
  3. Add dressing to broccoli and scallions. Toss to coat.
