Watermelon and Black Bean Salad

This is the perfect recipe for those who love the combo of sweet and savory. Watermelon is in season at this time of year, so it is extra sweet and delicious. Cucumber is another vegetable that is crisp and refreshing making this salad perfect for the summer. The feta cheese and black beans not only add a savory flavor to the salad, but also add healthy fat and protein to make this salad complete in nutrients. Garnish with basil and a zesty lime dressing to add an extra pop of flavor!

Watermelon and Black Bean Salad
Serves 8 – 1 cup portions

 

Ingredients

2 cups seedless watermelon, diced 

2 cups cucumber, cut into ½” slices

2 ½ cups cooked black beans or about 1 ½ cans, drained and rinsed

¼  cup extra virgin olive oil

1 tsp honey

Juice of 1 lime

Salt and pepper, to taste

5-8 basil leaves cut into ribbons 

¾ cup crumbled queso fresco or feta cheese 

 

Preparation

  1. In a large bowl, mix together the watermelon, cucumber and beans.  Set aside.  
  2. In a small bowl, lime juice and honey.  While you whisk, stream in the olive oil to create an emulsion.  Season with salt and pepper.
  3. Toss together watermelon, cucumber, beans and basil.  Top with crumbed queso fresco or feta  and serve immediately.
