The recipe below is more of a list of ingredients and ideas that have nearly endless combinations to make a great veggie side dish.
2 ears corn – preferably on the cob, shucked, and cut off the cob, if not defrosted frozen corn will work
1 tomato – in bite size pieces or whole if using cherry or grape tomatoes
1/4 red onion – you can use anything in the onion family! – cut in to a small dice
1/4 cup mixed herbs – any combination of fresh cilantro, basil, parsley, oregano, mint – minced
Mix everything in a large bowl.
pinch of salt
pinch of pepper
2 T olive oil
1 tsp lemon juice
Whisk dressing ingredients together and do a quick taste test. Add more of any of the ingredients to your liking. Add finished dressing to ingredients. Mix together and enjoy!
